Fruit Dumplings

Get another dessert from those expensive canned fruits, using juices left over from canned peaches, pears, apricots, etc.

Preheat oven to 425°F.

1 1/2 c. fruit juice-mixture
1 Tbsp. corn starch mixed with 1/2 c. cold water and 1 or 2 Tbsp. sugar, depending sweetness of juice.
1 tsp. red jello—any flavor
1 Thsp. butter or margarine
Bring to a boil.

Batter:
1 c. biscuit mix
1 Tbsp. sugar
1 egg yolk—save white for meringue)
Add 3-4 Thsp. milk—or to make medium stiff dough and beat well.
Pour boiling sauce into deep casserole or pudding pan. Drop batter into boiling sauce (approx. six dumplings) Bake about 12 minutes or til brown.

Brush hot dumplings with butter and sprinkle with sugar—and cinnamon if desired.
Serve just warm with half and half or whipped topping, or its own sauce.
