A Sauerkraut Hint From A Friend

Use your own or a recipe from a canning book. When kraut s sufficiently pounded, lay a plate on top. Then, instead of the usual weight, fill a plastic bag with water and lay on top of the plate. Bag must be large enough to spread to the edges of crock or plastic pail. The water serves as a weight and keeps kraut submerged under the juice.

Cover container with a clean cloth to keep out dust.
