Azara’s Pickled Onions

Recipe makes approximately seven pints. Requires three days.

1st day: Peel and slice 11/2 gallons onions medium thin. Cover with boiling water and let stand 6 - 8 hours. Drain. Cover with fresh boiling water.

2nd day: Drain. Add 1/2 c. salt and cover with fresh boiling water. Let stand 12 hours and drain.

Make syrup of:
3 c. sugar
3 c. vinegar
2 tsp. celery seed
2 tsp. pickling spices
4 - 1 inch pieces stick cinnamon

Heat to a boil and pour over onions

3rd day: Drain. Add: 1 c. vinegar and 1 c. sugar to syrup, bring to a boil and pour over onions. Let stand 12 hours, add 1 c. sugar, 1 c. vinegar and 1 tsp. vanilla to onions and syrup.

Bring to a boil, pack into hot jars, seal and process (boiling water) ten minutes.
