Brownie Loaf

Rough N Ready Health Bread

1/2 envelope (1/2 Tbsp.) yeast in 1/2 c. lukewarm water and 1/2 tsp. sugar
3/4 c. buttermilk (or sweet milk with 3/4 Tbsp. vinegar)
1 Tbsp. honey
1 Tbsp. molasses
2 Tbsp. melted shortening or cooking oil
1 Tbsp. powdered whey (optional, but good)
1 egg, beaten
1 1/2 c. white flour
1 (scant) tsp. salt
1/2 tsp. soda in the buttermilk-molasses mix
1 1/2 c. whole wheat flour
1/2 c. wheat germ

While yeast dissolves, warm buttermilk to lukewarm and blend in molasses and honey. Stir in soda, then white flour, salt, whey and egg. Add yeast and beat smooth. Let rise ‘til bubbly, 45-60 minutes. Stir in whole wheat flour and wheat germ and knead smooth. (Dough should be medium stiff.) Grease dough ball, cover and let rise to double in bulk, (may rise slowly). Knead down and shape in loaf. Use a well greased loaf pan or bake in a round loaf in a pie pan at 325-350°F. Butter the crust while hot.
