Carrot Bar Cookies

Cold Climate "Pumpkin" Bars

Set oven at 350°F.

Cream together:
1 c. sugar
1/4 c. shortening
1 Tbsp. light molasses
1 egg, unbeaten and 1 c. carrot pulp, cooked, sieved or put through the blender.

Sift together and add:
2 c. flour
1 tsp. baking powder
1 tsp. salt
2 tsp. pumpkin pie spice.

Bake in 10 x 16 inch greased cookie sheet 15 minutes at 350°F.

Have prepared a glaze of 1/2 c. powdered sugar, 2 Tbsp. melted butter or margarine, thinned to spread with orange juice or hot water. Spread over cake when done and return to oven for 2-3 minutes. Cut in bars when nearly cool. Don’t store until cold. Put waxed paper between layers.
