Celery-potato Soup

Saute l1 cup diced celery in 1 tsp. butter or margarine 'til tender. Boil with 1 medium potato, cubed, 2 Tbsp. diced onions 1 1/2 to 2 c. water 'til done. Mash. Add 1 c. milk and squirt of evaporated milk, 1/2 tsp. paprika, salt and pepper to taste and parsley, optional. Heat on  low and beat frothy before serving.
