Eggless Devils Food

Set oven at 350-375°F.

Cream together:
1 c. sugar
1/2 c. shortening or 1 cube solid type corn oil margarine
1 tsp. vanilla

Put in sifter:
2 c. plus 2 Tbsp. sifted cake flour (not mix)
1 tsp. soda
1/4 c. cocoa (scant)
1/2 tsp. salt

Put in a measuring cup:
1 Tbsp. vinegar (important) and fill to the 1 cup mark with low fat or skimmed milk

Stir a little of the flour mixture into the sugar mixture. Add milk and the remaining flour mixture all at once and beat smooth. Add 1/3 c. very hot coffee, or if coffee is out of bounds, use very hot water. Bake in 2 greased 8 inch layer pans, 20-25 minutes or 9x13 loaf pan 25-30 minutes or ‘til cake pulls away from sides of pan.
