Fruits 'n Honey Salad Mold

1 1/2 c. commercial (unsweetened) apple juice
1/4 c. honey
1 Tbsp. lemon juice
1 envelope unflavored gelatin, softened in 1/4 c. of the apple juice
2 large apples, peeled and diced. (must be ripe and mellow) or
2 ripe pears, or small can diced cling peaches, drained
1/2 c. walnuts, chopped fine
1/2 c. marshmallows, cut in pieces
Heat remaining apple juice, lemon juice and honey to boiling point. Pour softened gelatin into hot liquid and stir to dissolve. Cool. When thick, but not set, cut fruit and marshmallows directly into the gelatin mixture. Add nuts and stir once or twice while setting to distribute fruits. Especially compatible with cheese medley dressing.
