Heart In Spanish Sauce

Soak the heart in cold water several hours. Trim off all fat possible. May split down one side to facilitate cleaning. Boil in crock pot or pressure cook until tender. About 4 hours slow boiling or at high temperature in crock pot. About 1 1/2 hours at 10 pounds pressure will be required.

Slice 1/2 inch thick and arrange in a baking dish. Cover with Basic Spanish Sauce, possibly adding an extra dash of chili powder and pounded garlic or garlic salt. Bake covered approximately 2 hours at 300 -350°F.

Different! And great with baked potatoes, cold slaw, lemon pie—oh, my!
