Hot Buttered Beets

Wash and trim off all but 1/2—1 inch of stem. Don't break off the root or color will bleed out. Cook in 1—2 inches of water. When tender, 1—2 hours, depending upon size, place in cold water, slip off skins and dice.

Heat cooked, diced beets with 1-2 Tbsp. butter or margarine, add 1-2 Tbsp. vinegar or lemon juice. Heat and stir 'til beets are butter coated. Sprinkle with sugar (optional).
