Jelly Roll

To use up those egg yolks from the Angel Food Cake…this is an oldie.

Set oven at 350°F.

9 egg yolks and 1 whole egg
1 c. sugar
1 1/4 c. cake flour, sifted before measuring
2/3 tsp. cream of tartar
1/2 tsp. salt
1/2 c. boiling water
3 tsp. baking powder

Beat eggs well, add sugar and beat ‘til very light. Add cake flour with cream of tartar and salt, then the boiling water. Last, stir in the baking powder and a little vanilla, if desired.

Pour thinly on 2 greased cookie sheets or sheets lined with waxed paper. Bake 12-14 minutes.

Turn out on a tea towel and roll up in the towel. Cool, unroll and spread with jelly, jam or cooked (thick) pudding mix.
For a special treat, frost top side with butter-powdered sugar icing.
