Low Calorie, Low Cholesterol White Cake

Set oven at 350°F.

Cream together:
2/3 c. sugar
3/4 stick corn oil margarine
Artificial sweetener to equal 2 Tbsp. sugar
Add: 2 egg whites, unbeaten
1 tsp. vanilla — beat ‘til fluffy
2 1/4 c. cake flour, sifted before measuring

Stir small amount of flour into sugar mixture with:
1/2 tsp. soda
1 1/2 tsp. baking powder
1/2 tsp. salt

Add all at once:
1 Tbsp. lemon juice
1 c. low fat milk and remaining flour.
Beat well.

Beat in 1/4 c. ice water. Bake in two 8 inch layer pans, 350-375°F ‘til cake shrinks from sides of pan. Frost with low calorie icing from Confections and Icings Section.
