Meat Pie With Biscuit Topping

Another meal from yesterday’s roast.

1-2 c. boned, cubed chicken or turkey
1 can cream of chicken soup mixed with 1 c. water

Bring soup mixture to boil and pour over chicken in a casserole. Cooked peas, carrots, potatoes, optional. Place in 400°F oven while mixing dough.

For Dough:
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 Tbsp. oil or melted shortening
1/2 c. milk or reconstituted whey, or enough to make soft biscuit dough

Bake and test by lifting biscuit gently. Done when no raw dough can be seen underneath.

Note: Use a large enough dish or when biscuits have risen gravy will boil over edge.
