Puddings and Sauces
Oatmeal Batter Pudding

Set oven to 400°F—use a deep pudding pan.

Heat to boiling:
1 c. water
2 c. brown sugar

Sift into bowl:
3/4 c. flour
1 tsp. baking powder
1/4 c. sugar
1/2 tsp. cinnamon, 1/2 tsp. nutmeg, 1/4 tsp. cloves
1/2 tsp. salt

1/2 c. quick cooking oatmeal
1/3 c. milk, or enough for medium soft batter
1 egg, unbeaten
2 Tbsp. melted shortening
1/2 c. raisins, currants or nuts (optional)

Drop from tablespoon into boiling syrup, and put in oven 15 minutes or ‘til batter looks done when lifted with a fork. Serve warm. Sauce will be on the bottom.
