Oatmeal Bread

Caramelize (melt over medium heat ‘til light brown and bubbly).
1/3 c. sugar
Add slowly:
1 3/4 c. hot water and simmer just ‘til sugar has dissolved.
Pour hot over but do not stir:
1 1/4 c. old fashioned oatmeal
1/3 c. shortening
1/3 c. sugar
Cool to lukewarm by setting bowl in a pan of cold water or in the sink.

Soak 1 envelope yeast in 1/2 c. lukewarm water with 1/2 tsp. sugar to start yeast.

When oatmeal mixture has cooled stir in:
2 c. flour
2 tsp. baking powder
1 1/2 tsp. salt
1 Tbsp. powdered whey (optional)
Add raisins or cut dates, if desired.
Add softened yeast and beat smooth.

Stir in 1 1/2-2 more c. flour and roll into a soft ball with mixing spoon. Oil dough, cover and let rise to double in bulk. Knead down and shape into two loaves.

Let rise again to double and bake approximately 1 hour at 350°F.

Delicious sliced, buttered, and the slices heated on a cookie sheet at serving time. For a special treat, dust with sugar and cinnamon.
