Potatoes and Vegetables
Potato Medley

2 c. cooked, cubed potatoes mixed with a casserole half-filled with bits of cooked crumbled bacon, ham or luncheon meat
1/4 c. chopped onion
Shreds of pimento

Make a thin white sauce of:
1/4 stick margarine or butter
3 Tbsp. flour (scant)
2 c. milk
Salt and pepper to taste

Cook, adding milk if necessary. Pour over first mixture and top with grated cheddar or American cheese. Sprinkle and top with paprika and bake at 350°F 'til bubbly and lightly browned.
