Quick Mix Whey Dough

Use for Dinner, Parkerhouse, Cloverleaf or Fan Rolls. Great for Sandwich Buns.

Put in mixing bowl:
1/2 c. Luke warm water
1/2 tsp. sugar
1 Tbsp. powdered whey

Keep in a warm place (few minutes) ‘til yeast begins to bubble.
Stir in:
2 c. flour
2 Tbsp. sugar
1 1/2 tsp. salt
1 1/2 tsp. baking powder
Beat ‘til smooth and stir in:
3 Tbsp. melted shortening
1 1/2-2 c. more flour

Stir into a ball and let rise ‘til double in bulk, approximately 45 minutes. Knead down with only enough flour on the board to handle.

For Dinner Rolls, divide into 16-18 portions, and roll each in grease in baking pan or two large pie pans. Let rise to double bulk and pop into a 400°F oven for approximately 20 minutes, or ‘til medium brown. Remove from pans to rack or towel, and brush tops with melted butter or margarine for a tender and flavorful crust. May increase the amount of whey, if you like the flavor.
