Scotch Lassie Pie—A Do-ahead Dessert

Crust and topping:
1/2 c. butter or margarine, melted and lightly browned
3/4 c. quick cooking oatmeal
1/2 c. walnuts, rolled or ground fine
1/3 c. brown sugar

Stir oatmeal and nuts into browned butter. Add brown sugar and mix well. Save out 1/2 of the mixture for topping and add 3 Tbsp. flour and 1 Tbsp. water to the remaining 2/3 for crust. Press into 9-inch pie plate and bake 20 minutes at 350°.

Filling:
1/2 c. butter or margarine
1/4 c. corn syrup, light or dark
1/2 c. brown sugar
1/3 c. flour
2 eggs, beaten
1 Tbsp. dark molasses, for flavor
1/2 C. water

Cook, stirring constantly ‘til thick; medium heat.

Stir in 1/3 C. evaporated milk, undiluted. Let cool and add 1/2 c. of dairy whipped topping; more for a richer pie.

Spread in the baked crust and crumble reserved oatmeal mixture over top.
