Spinach—Beet Tops—Swiss Chard

These all come under one category—greens. Spinach is delectable raw in salads. While cooking, all greens must be covered (pushed down) under boiling water. When tender, lift from boiling water to serving dish. Drain.

Instead of boiling, which leaches vitamins, use a collapsable steamer with an inch or so of water.

After cooking, cut across and through the mass in one inch squares with a sharp knife. Dot with butter and sprinkle with salt and pepper—vinegar if desired. May also be topped with chopped, hard-cooked egg and fried, crumbled bacon.
