Potatoes and Vegetables
That Ever-Lovin' Potato Salad

2 c. diced, cooked potatoes
2 hard cooked eggs, chopped
2 Tbsp. chopped onion, green onion tops or chives
A little diced sweet or dill pickle, or relish. Mayonnaise or salad dressing for soft or dry salad as desired.
OR:
A mix of 1/2 c. mayonnaise, 2-3 Tbsp. sweet pickle vinegar, 2 tsp. prepared mustard, 1/2 tsp. garlic salt.

Mix and thin with a little sour cream or evaporated milk to a thick cream consistency.

Garnish with hard cooked egg slices and paprika.
