Top Dressed Hashed Browns

Grate or dice:
4 c. cooked cold potatoes 

Chop:
1—2 large onions

Over medium heat, fry onions in 1 Tbsp. butter. Remove from pan and keep hot.

Add 1 more Tbsp. butter to pan and put in the potatoes. Salt and pepper to taste and toss 'til butter coated and very hot; turn out into a shallow serving dish and cover with the fried onions and a dash of paprika. May use grated cheese and paprika instead of the onions.
