Jams, Jellies and Syrups
Zucchini-Cherry or Raspberry Flavored Jam

3 c. peeled, ground zucchini
1/3 c. lemon juice
1 c. water
1 pkg. powdered pectin
6 c. sugar
1 pkg. cherry or raspberry gelatine

Cook zucchini, water and lemon juice five minutes. Add pectin. Bring to a boil. Add sugar, cook ‘til it sheets from a spoon. Take from heat and stir in gelatine. Pour into sterilized jelly jars and seal with paraffin.

Very good as a filling for sweet rolls…place 1/2 teaspoon full in center of each roll when ready for the oven.
