Zucchini-Pineapple Marmalade

Very good as fruit filling for sweet rolls.

Cook together five minutes:
1 c. coarse-ground zucchini
2 Tbsp. lemon juice
3/4 c. crushed pineapple and juice

1/2 pkg. powdered pectin

Bring to a boil and add:
2 c. sugar

Cook ‘til it begins to sheet from a spoon. Sprinkle in 1/2 tsp. peach flavored gelatine. Stir and cool few minutes to prevent fruit floating to the top.

Pour into sterilized jars and paraffin.

May omit peach gelatine and add 1 small orange, membrane removed, and cut in small pieces. Add with pineapple.
