Zucchini-Strawberry Jam

A Berry Stretcher!

1 c. zucchini, peeled and ground
1/2 c. water
2 Tbsp. lemon juice
1 pkg. powdered pectin
1 c. strawberries, crushed
2 1/2 c. sugar

Cook zucchini, water and lemon juice ‘til zucchini is tender. Add powdered pectin and bring to a boil. Add strawberries and sugar. Cook ‘til it sheets from the spoon. Put in sterilized jelly jars and seal with paraffin.
